We meet people on fad diets. Can't eat tomatoes, don't fry in olive oil, avoiding wheat that's bad too. Well we're on an Italian diet because most of the 58 million population have got it right.

Tofu is wonderful but in the hands of someone who can't cook it's a disaster dish. Get a recipe, surround it with strong flavours and most of all respect 3,000 years of history.

Homaro Cantu, the chef at Chicago's Moto restaurant, makes dishes by printing flavored inks onto edible sheets of "paper" and combining this papercraft food with elements cooked from the inside out with lasers.
